Preparation Method
Prep middle bacon, rind removed, chopped onions, thinly sliced zucchini, coarsely grated chopped fresh basil, plus fresh whole leaves to serve vintage cheddar cheese, coarsely grated Step 1 Preheat oven to 200C/180C fan-forced. Use 1 tablespoon of the butter to grease a 5cm-deep, 20 x 30cm baking dish. Step 2 Heat the oil in a large frying pan over high heat. Cook the bacon and onion, stirring, for 5 minutes or until golden. Step 3 Meanwhile, whisk the eggs and cream in a bowl. Stir in the bacon mixture, almond meal, zucchini, basil, grated cheese and remaining butter. Season. Pour the mixture into the prepared pan. Top with dollops of ricotta. Bake for 45-50 minutes or until firm to the touch and golden. Step 4 Cut into rectangles and serve warm or cold. source: taste.com.au
