Prep eggs, lightly whisked 1 lemon, rind finely grated strawberries, hulled, coarsely chopped chopped pistachio Step 1 Place cottage cheese, eggs and vanilla in a large bowl. Whisk to combine. Step 2 Combine almond meal and baking powder in a bowl. Pour in the cottage cheese mixture. Stir until combined. Step 3 Heat oil in a large non-stick frying pan over low heat. Add heaped teaspoonfuls of the mixture and cook for 11/2-2 minutes. Flip and cook for a further 30-60 seconds. Step 4 Combine extra cottage cheese, lemon rind and juice, strawberries and pistachio kernels in a bowl. Step 5 Serve pancakes with cottage cheese mixture on the side. source: taste.com.au
